To Make Clarified Tropical Mix: 8.5oz (255ml) Coconut Cream 8.5oz (255ml) Fresh Pineapple Juice (strained) 11oz (330ml) Don's Mix #2 For Don's Mix #2: 2 Parts Ruby Red Grapefruit (strained) 1 Part Cinnamon Simple Syrup For Coconut Cream: 1 Can Unsweetened Coconut Milk (I use Thai Kitchen) 11.6oz (325ml) Sugar Combine ingredients and let sit 1 hour or until separation occurs then strain through a fine mesh strainer to get rid of the big curds, then strain again through a coffee filter.
