In this episode we explore using foams to enhance our cocktails!

As I have said many many times on this channel we drink with our eyes as well as our mouths and it could be argued that the visual element is the most important as we first interact with a cocktail through our eyes. Foams should enhance the entirety of a cocktail, they should never be the highlight or overpower a cocktail. When used properly they compliment, contrast and enhance the flavors in the body of the drink, this way they make a more complete whole. In this episode I went with the flavors in a French 75 as inspiration to make a cocktail with an Aperitivo Base complimented with an Elderflower foam (made with St. Germain) a lot of you have been asking me for more cocktails utilizing St. Germain and so here one is! Ingredients
 

Instructions
 

  • Add ingredients to mixing glass
  • Add ice and stir until chilled
  • With iSi Whipper dispense Foam (see notes) into chilled glass
  • Strain cocktail into glass, through the foam

Notes

Foam:
3oz (90ml) Elderflower Liqueur
1.5oz (45ml) Lemon Juice
1oz (30ml) Water
2 Egg Whites
Charge the iSi whipper with NO2 cartridge(s) and let sit in refrigerator for at least 30 minutes before using.

  1. Great video! Thank you for showcasing iSi products! I learned something new–pour the drink through the foam to add more flavor to the drink. Makes sense and offers a nice visual as the foam rises with the drink. Next time, try holding the iSi Gourmet Whip upside down with the lever facing away from you–it’s a much more comfortable hold.
